2 heads of greens- either butter leaf or green leaf-cored and washed and be sure to leave lettuce leaves whole.
1-cucumbers peeled and Julian
1 package of bean spouts washed and drained
1 lb. small prawns shelled-deveined
1 lb. pork- either boneless chop or tenderloin
1lb. beef- London broil
1 package of white soba noodles
3-4 Thai chills diced
1/4 cup fish sauce
juice of 5 to 7 limes
2 Tablespoons sugar

For the sauce:in a bowl combine fish sauce, sugar,and lime juice.

for the main entree:
In large pot, boil pork until cooked. ( about 30 minutes) when cooled cut into long thin slices.
On a grill or broil in oven, take London broil and cook until medium rare. let set aside for 5 to 7 minutes, so juice stay in meat. then slice into long thin slices.
In small pot filled 1/2 full of water, place shelled and deveined shrimp and boiled until done 10 minutes. drain and cool with ice water. when cooled slice shrimp length wides in half.
In a 5 quart pot,fill 1/2 full of water.Turn on high heat until comes to a boil. Add soba noodle and boil for 15 minutes. Drain quickly and rinse with very cold water until noodles are cooled. Take noodles in small bunches,then wrap noodles in small circles and arrange on one side of large platter. Add cleaned lettuce leaves,Julian cucumbers,bean sprouts, beef, pork, shrimp and mint on another side of platter.
Place platter on the center of the table and in individual bowls, place sauce and top with chili, and ground peanuts.
Serve with steam white rice and hot French bread.
