6 chicken breasts
6 tsps sundried tomatoes-chopped
6 tbsp crumbled feta cheese
6 tbsp chopped olives
3 tsp minced garlic
3 tbsp pine nuts
3 tbsp balsamic vinegar
extra virgin olive oil
salt and pepper

Directions:
Directions:
Preheat oven to 450º. Toss together tomatoes, feta cheese, olives, garlic, pine nuts and vinegar.

Rub chicken with olive oil, salt & pepper. Cut a slit in the thick part of each chicken breast, creating a pocket. Add stuffing to pocket and transfer chicken to baking sheet.

Bake for 15 minutes. Top with remaining stuffing.

I usually make more stuffing than the recipes calls for so that I have enough to put on top of the chicken.
