2 tablespoons vegetable oil
1 medium onion, chopped
3 carrots, peeled and chopped
3 ribs celery, chopped
1 lb Polish Sausage, slices in 1/2-inch-thick rounds
1 package Split Pea Soup Mix
2 1/2 quarts water

Directions:
Directions:
Heat the oil in a large stockpot. Add the onions, carrots, celery, and sausage. Saute until the vegetables are tender. Add the Split Pea Soup Mix and the water, and bring to a boil. Reduce the heat to simmer, and cook over low heat for 2 to 3 hours.
