3/4 cup sugar
2 T. all-purpose flour
1/4 tsp salt
2 cups milk
3 eggs, separated, reserve egg whites
1 tsp vanilla
1 box Nabisco vanilla wafers
6 to 8 ripe bananas

Directions:
Directions:
Combine 1/2 cup sugar, flour and salt with a wire whisk in a saucepan; stir in milk. Cook over low heat, stirring constantly, until mixture begins to get warm. Add a small amount of the milk mixture into your beaten egg yolks and stir. Then pour the eggs back into the milk mixture. (This allows the eggs to warm a little before adding them to the heated mixture). Cook until sauce is thickened, stirring constantly. Remove from heat; add vanilla. Let custard cool completely.

Layer bottom of a round casserole dish with wafers; top with a layer of sliced bananas. Pour a portion of the custard over the bananas. Continue to layer these 3 ingredients, ending with custard on top.

Meringue:
Beat egg whites stiff, but not dry. Gradually add remaining 1/4 cup sugar and beat until mixture forms stiff peaks. Pile on top of pudding in casserole dish, being sure to seal the edges with meringue. Bake in 425º oven for 5 minutes, or until delicately browned. Serve at room temperature or chilled. Refrigerate any leftovers.
