3 c. potatoes, chopped
1 c. water
1/2 c. celery, sliced
1/2 c. carrots, sliced
1/4 c. onion, chopped
1 tsp. parsley flakes
1 chicken bouillon cube
1/2 tsp. salt
dash pepper
1 1/2 c. milk
2 T. flour
1/2 lb. Velveeta cheese (1/4 of a 2 lb. block)

Directions:
Directions:
Combine potatoes, water, celery, carrots, onion, parsley,
bouillon, salt and pepper. Mix well and simmer for 15 minutes until vegetables are tender. In a separate bowl, gradually add milk to flour until blended. Add milk mixture to vegetables. Cook until thickened. Cut cheese into cubes, add and stir until melted. (If water cooks away, add another cup).
