1/4 c chopped green onion (I use dehydrated), optional
3 tbsp butter
1/2 c fresh, sliced mushrooms (optional)
14 large eggs, beaten
For sauce:
3 tbsp butter
3 tbsp flour
3 c milk
1 1/2 c Shredded Process American Cheese
3 1/3 c bread crumbs
1 stick melted butter

Directions:
Directions:
Saute onions and mushrooms in butter. Add eggs and scramble til just set, still a little wet. Set aside. For sauce, cook over stove in saucepan butter and flour. Add milk and stir til thickens. Add grated cheese. Gently stir sauce into eggs. Put in 13x9. When ready to bake top with 3 1/3 cups soft bread crumbs mixed with a stick of melted butter. Bake 350º for 30 min. Can make night before, cover and store in fridge. Take out 30 minutes before cooking.
