This is one of my favourites! I love it. In this recipe, I describe
according to a big pot of penne pasta.

Ok, start by cooking the penne. Add salt and olive oil to the
water to add taste and prevent sticking. When cooked, drain
the pasta.

With the pasta draining or while cooking the pasta, get a
blender. Add both cans of plum tomatoes into it. Add a
crushed garlic clove. Add some salt, some pepper and some
lemon juice (I measure according to taste). Now, grab some
olives (about 7) and add them. Add the small dried chilli (these
are about 1-2cm in size if you are looking for them). They're
little firecrackers, I'll tell ya!! Anyways, its not too spicy at all.
Add a Chicken Cube. Ok, now add the italian spices - this
creates a really nice mix
of taste. Put the lid on the blender, and blend away! I like the
sauce really smooth, so leave it for a while. Once blended,
add it to a saucepot and put on the heat. While its heating,
grab a whole bunch of olives and chop each one in half
(lengthwise) - this is a bit of a chore, but its worth it. Add as
much according to how much pasta you have cooked - there
should be at least half an olive for every three penne pieces.
Now, once done, grab the drained penne and add it to the big
saucepot. Don't worry if they seemed to have stuck - the
sauce will separate the pieces.

Taste the sauce (which should be hot by now). Notice the
slight kick of olive taste! Add more of anything you think is
lacking - remember - taste is the KEY. Now, add some olive
oil and stir it in. Add the sauce to the pasta and mix it away
into the penne so its evenly over. Now quickly add the olives
and the grated mozzarella, in order to make it melt. Keep
stirring until properly mixed and the cheese has noticeably
melted.

Now, serve! This is a really tasty pasta! Hope you like it!!
