This is one of the most simple soups ever and it tastes so
fresh and delicious. No need for chicken stock and additives
that have nothing to do with BROCCOLI!

1. Get your stalks of broccoli and wash. Place upside down
on a chopping board while holding the stem and gently rotate
the broccoli stalk as your knife cuts away the pieces of
broccoli.

2. Place the stalks of broccoli in already extremely boiling,
lightly salted water. Leave in there for 4 minutes or until your
knife can easily cut through the pieces of broccoli.

3. While the broccoli is boiling, grab a knife and put your ash
rolled goats cheese on a chopping board. Dip the knife in the
boiling water and immediately cut a 1-2cm thick slice of goats
cheese. Dip knife back in the water and repeat depending on
how many slices you want (2 per bowl of soup). The idea is
that the knife heats up and cuts through the cheese like
butter, preventing it from crumbling.

4. Get your boiled broccoli and put it in a blender. Add half of
the boiled water to the blender (it should be green coloured)
and blend in bursts, then full.

5. Taste it, season with salt depending on your preference.

6. Place around 4 or 5 walnuts in the centre of the bowl, and
on top two slices of the ash rolled goats cheese. Pour the
soup around these and let it form a ring around the cheese
and walnuts. ENJOY!!!

Best served with a bit of toasted chunky bread, or
alternatively, place 2 walnuts in the bottom of a mug with once
piece of goats cheese on top and fill with soup to get nice
melted cheese.
