Shortbread:
1 C salted butter, softened
3/4 C light brown sugar, packed
2 t. pure vanilla extract
2 C all-purpose flour
Filling/Dip:
1 T. salted butter
1 C semi-sweet chocolate chips

Directions:
Directions:
Preheat oven to 325 F

Cookies:
Cream first 2 ingredients, slowly add vanilla &
flour. Beat till smooth.
Shape dough into 1" balls, press or roll into an
oval (2" long)
Place on parchment paper, 2" apart. Bake 17-19
min, or until cookies are golden brown. Cool.

Filling or Dip:
Melt chocolate & butter together (double boiler
works best). Dip the cookies in chocolate. For
an added treat add ground pecans or walnuts to
the chocolate prior to dipping
