1 ½ Boneless chicken breast (cut into 1½-inch
strips), 1 ½ -2 T. Yellow Curry Paste, 3 Medium
cooked peeled potatoes (cut into 1-inch cubes),
1 can Coconut milk, 3 t. Fish sauce, 3 ½ t.
Sugar, 1 Yellow pepper, (cut in strips) 1 onion
cut lengthwise. 1 clove garlic minced. Hot
steamed Jasmine rice

Directions:
Directions:
Saute veggies and garlic then set aside. In a
sauce pan, heat ½ cup of coconut milk and yellow
curry paste on high heat until curry paste
bubbles. Add chicken, 2 t. of fish sauce and 2
teaspoons of sugar; stir continually and cook
for about 5 minutes. Then, add ½ cup of coconut
milk, potatoes, onion, and peppers. 1 t. of fish
sauce, and 1 ½ t. of sugar; stir occasionally
until chicken is cooked.
Serve with hot steamed Jasmine rice
