Ingredients: 4 cups steamed rice 3/4 pound chicken breasts or thighs 1 onion 1 and 2/3 cups Dashi *see note 7 tbsp soy sauce 4 tbsp Mirin *see note 3 tbsp sugar 4 eggs

Directions:Prepare your rice, preferably in a rice cooker. Cut chicken into bite-sized pieces. Slice Onion thinly. In a pan, heat the Dashi. Add soy sauce, Mirin, and sugar. Stir. Add chicken and let simmer on a low heat for a few minutes. Add the onion slices and continue to let simmer another few minutes. Beat the eggs in a bowl. Bring soup to a boil then pour the eggs into the soup. Set heat to low and put a lid over it. Turn off the heat after a minute. Put the steamed rice in a bowl and put the chicken and onions on top. |

Notes: I suggest you check Asian supermarkets for some of the ingredients. Mirin and Dashi may be difficult to obtain in some areas. If you live near Beaverton, Uwajimaya supermarket will have them if you ask the staff. Otherwise, you can substitute soup stock for Dashi and extra sugar and Sake (rice wine) for Mirin, though the taste will change a bit.
