Danish Potato Salad Recipe

1/4 c. white vinegar
1/4 c. water
1/4 c. sugar
1/4 tsp. salt
1 tsp. dry mustard
Dash of pepper

2 eggs, well beaten
1 c. Hellmann's Mayonnaise
4 c. (2 lb.) potatoes, cooked and cubed
1 Tbsp. onion, minced
2 eggs, hard boiled & chopped

Combine first 6 ingredients. Bring to a boil. Reduce heat. Gradually add beaten eggs. Cook, stirring constantly, about 2 - 5 minutes.

Beat in mayonnaise. Add potatoes, minced onion and boiled eggs and toss.

Serve hot, cold or at room temperature. This is good made a day before serving.
