White Fruit Cake Recipe

1 lb. Butter
2. sugar
6 eggs. Separated
4 c. flour
1 ½ oz. Or 3 Tbs. Lemon extract
1 lb. Candied Cherries
1 pkg. White raisins

Dredge the fruit with a little flour.
Cream butter, sugar & egg yokes.
Add sifted flour and lemon extract.
Mix well. Fold in stiffly beaten egg whites.
Add fruit and nuts. Pour into 3 loaf pans.
Put pan of water on top shelf of oven so the cakes don’t dry out. Bake 300º for 1 hr. and 16 mins.
Reset oven for 350º for 7 mins.
Turn off oven and leave another 7 mins.
Cool then wrap in cheesecloth with grape juice then tin foil. Better with age.
