4 tbsp. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. baking powder
10 oz. pkg. frozen chopped spinach, thawed, drained and squeezed dry
1 small onion, finely chopped
6 strips of crisp bacon
1 lb. Cheddar cheese, shredded
1/2 c. chopped mushrooms
1 c. canned fried onion rings, crushed

Heat oven to 350. Melt butter in a 9 x 13 in. pan. In mixing bowl mix together eggs, flour, milk and baking powder until smooth. Stir in spinach, onion, finely crumbled bacon, cheese and mushrooms. Pour into pan. Sprinkle with crushed onion rings. Bake 30 - 35 min. until golden brown. Cool slightly. Cut in small squares for appetizers or large squares for dinner vegetable.
