4 1 pound cans of stewed tomatoes
1 cup chopped onion
1 cup chopped green pepper
4 cloves garlic, minced
1 Tbsp vinegar
1 Tbsp lemon juice
1 tsp garlic powder
1/2 to 1 cup chopped fresh chili's (I use jalapenos)

Directions:

Mix all ingredients together in a large pot. Cook over low heat until all ingredients are soft, approximately 45 minutes. Chill and serve with your favorite Mexican dish.

This recipe can be more or less tailored to your tastes. Fresh jalapenos are very hot - and the more seeds and pulp you add, the hotter they become in the salsa. To "tame it down", discard all or some of the seeds. Start with 1/4 to 1/2 cup for mild to medium salsa - then add more depending on your tolerance for heat. I chop all the tomatoes, peppers and onions in a food processor. All of these can be left somewhat "chunky" or finely chopped, depending on your preference.
