3 eggs
2 c. sugar

1 c. oil
1 tsp. vanilla

2 c. flour
1 c. quick oats
1 Tbsp. cinnamon
1 tsp. soda
1 tsp. salt
1/4 tsp. baking powder

2 c. grated raw zucchini
1 c. chopped nuts or 1/2 c. nuts and 1/2 c. coconut
Directions:

Beat eggs and sugar. Add oil and vanilla.

Mix in flour, oats, cinnamon, soda, salt and baking powder.

Add zucchini, nuts and coconut. Mix well.

Pour into 2 greased and floured 4 x 8 inch loaf pans.

Bake 1 hour at 350º. This can also be baked in a large tube or Bundt pan.


Variation: add 3 tablespoons of cocoa with flour mixture and add 6 oz. chocolate chips when nuts are added.
