2 eggs scrambled
1 handful of spinach
left over salmon (as much or little as you like)
cracked pepper
olive oil (to coat skillet)
1 clove of garlic sliced

Directions:
Directions:
Lightly coat skillet with Olive Oil
Rub sliced clove of garlic around the olive oil and remove.
Heat skillet 'til very hot.
Add spinach.
When spinach is softening add eggs and salmon.
Crack pepper over the top
Mix in hot skillet quickly and remove to serving plate.

This can be made with any fish. It's really good with Halibut or Ono too.
