Crepes with Ricotta Filling Recipe

1 c. flour
2 eggs
1/2 c. milk
1/2 c. water
1/4 tsp. salt
2 T. butter, melted

3/4 c. dry ricotta (drained)
1 egg yolk, beaten
1/2 T. melted butter
1/4 tsp. salt
1/4 tsp. cinnamon
1 T. sugar

Whisk together flour and eggs. Gradually add milk and water. Add salt and butter. Beat until smooth.
Heat frying pan (medium high heat). Pour about 1/4 c. batter on oiled pan. Tilt the pan to coat. Cook about 2 minutes. Flip.

Roll filling in crepes. Bake 15 minutes at 250
Good served with a berry sauce.
