1 Tabl. Vegetable oil
3 oz. onion, finely diced
6 oz.(volume) coarse cornmeal(quick cooking grits)
1 qt. (4 cups) chicken stock.
2 oz. heavy cream
3 oz. cheddar cheese
1 Tbl. Parsley ,finely minced
Salt and pepper to taste

Directions:
In 2 qt sauce pan ,sauté the onion in 1 Tabl of vegetable oil. Add chicken stock and bring to a boil. Add the cornmeal and cook for 5 minutes at a simmer over medium to medium low heat, stirring constantly. Remove from heat and add the heavy cream, cheddar cheese and parsley. Taste for seasoning and add salt and pepper as necessary. Keep warm
