Wash your tomatoes. Bring water to boil, drop in tomatoes. When peels break (3 minutes for small to medium sized, 4 minutes for big usually), take out of pan, peel, core and put in large kettle. Break up big ones. Cook until tomatoes are done. Have jar flats in hot water, and have your jars hot. Put tomatoes in jars, add 1 tsp. salt per quart or 1/2 tsp. salt per pint. Wipe off mouth of jar. Put lids on. If you have everything hot (tomatoes, jars, flats) and you work quickly, they will seal.

5 gallon bucket of tomatoes will make 10-11 quarts.

These are great for soups, goulash, or any recipe that calls for tomatoes. I think they're much easier than doing whole tomatoes just because you don't have to process them if you get them jarred fast enough.
