1 ½ cup salad oil
2 cup sugar
2 cup flour
1 tsp salt
3 tsp cinnamon (I always add a little more, I like the cinnamon)
2 tsp baking powder
2 tsp soda
4 eggs (1 at a time)
3 large cups grated carrots
1½ cups nuts

Mix together the first 7 ingredients…add eggs mixing well between each one. Beat mixture until well combined…add carrots, mix well again. Stir in nuts.

Pour mixture into a prepared 9x13 cake pan, bake (350º 40 – 45 minutes) until center springs back when lightly touched.

Cool completely and frost with cream cheese frosting.
