3 large potatoes, coarsely ground
1 large white onion, medium grated
1/2 c. flour
1 egg, beaten
1/8 tsp. baking powder
1 tsp. salt
1/4 tsp. white pepper
Crisco for frying

Directions:
Directions:
Grate potatoes and onions and mix together in a large bowl. Keep cold and avoid the potatoes from turning brown.

Just before cooking, drain the potatoes and add the other ingredients.

Heat Crisco to medium high about 1/2 inch deep in a heavy skillet.

Using a soup spoon, carefully spoon the batter into the hot oil.

Turn when brown. Use two hands with a knife and fork turning carefully to prevent splashing of oil. 3-5 minutes per side.

Lift and drain on a cookie sheet lined with paper towels or a brown paper bag.

Add Crisco as needed.

Serve with an assortment of condiments including powdered sugar, sour cream, cinnamon sugar, apple sauce or strawberry jam.
