Start to Finish 40 minutes

2 tsp. olive oil
2 pork tenderloins (3/4 lb each)
1 tsp. black pepper
- tsp. ground cayenne pepper
tsp. salt

Pineapple Salsa:
1 can (8oz) pineapple tidbits in juice, drained
4 medium green onions, sliced ( cup)
cup chopped red bell pepper
2 table chopped fresh or 2 tsp. dried mint leaves
tsp. grated lime peel
2 tsp. lime juice


1.) Heat coals or gas grill. Rub 1 teaspoon oil onto each pork tenderloin; sprinkle with black pepper, red pepper and salt.

2.) Carefully brush oil on grill rack. Place pork on grill over medium heat. Cover grill; cook 20 to 30 minutes, turning 3 times, until pork has slight blush of pink in center and meat thermometer inserted in center reads 106 degrees F.

3.) Meanwhile, in medium bowl, stir together salsa ingredients. Cut pork into inch slices. Serve with Salsa.
