2 lbs. extra lean ground beef
1/2 c. chopped onion
1/2 c. chopped green pepper
1 (2 1/2 oz.) can sliced mushrooms, drained
8 oz. grated mozzarella cheese
1/4 to 1/2 c. Parmesan
1-2 tsp. extra virgin olive oil
2 (15 oz.) jars extra thick spaghetti sauce
For topping:
2 eggs
1 tbsp. extra virgin olive oil
1 c. flour
1 c. milk
1/2 tsp. salt

Preheat oven to 400F. Brown ground beef, onion and green pepper in oil; drain well. Combine beef mixture with mushrooms and spaghetti sauce. Pour into the bottom of an ungreased 13x9 in. glass baking dish. Cover with mozzarella cheese. Prepare topping by combining all topping ingredients; beat until smooth and pour over mozzarella cheese. Sprinkle generously with Parmesan cheese. Bake uncovered for 30 to 35 minutes or until topping is golden brown. To serve, cut into squares and flip upside down on plate so sauce is on top.
Makes 6 servings.
