1 pkg. yellow cake mix 1 can (8 oz.) crushed pineapple undrained 1 c. evaporated milk 2 eggs 1/2 t. nutmeg 1/2 c. flaked coconut
GLAZE- 1 1/2 c. conf. sugar 2 T. milk 1-2 drops coconut extract 2 T flaked coconut toasted
Combine first five ingred. and beat on low speed until moistened. Beat on high for 2 min., stir in coconut. Pour into greased loaf pans (2) and bake at 325 degrees for 45-50 min. Cool for 10 min. in pans and then remove to wire racks. For glaze, combine ingred. until smooth; drizzle over loaves and sprinkle with coconut.
