Ingredients: 1 whole eye of round, chilled Cracked peppercorns Marinade: 1 teaspoon ketchup ½ teaspoon garlic powder 1 teaspoon paprika ¾ cup red wine vinegar 1 cup soy sauce Special utensils: Very sharp knife Heavy meat tenderizer

Directions:Remove all fat, sinew, and gristle from exterior of eye of round to expose the flesh. Partially freezing meat and a sharp knife will make this task easier. Lay completely trimmed beef on a firm surface and beat the cracked peppercorns into the beef, using a heavy meat tenderizer (flat side), to uniformly coat the meat with pepper. Some pepper will scatter as you work. Mix marinade in a Zip lock freezer bag or container with a light lid and add beef. Refrigerate overnight. Occasionally rotate or baste the beef. When ready to cook, remove beef from marinade and wrap tightly in several layers of heavy aluminum foil. Roast in preheated 350° oven 35 minutes for rare, 40 minutes for medium rare. Bring marinade to a full boil and serve the thinly sliced meat with warm marinade. Excellent for a buffet served cold with crusty French bread and horseradish on the side. |

Notes: Survey Beef has been passed down among employees of the US Geological Survey, Water Resources Division, for over 60 years. It was served to us at several folks' homes early in our marriage. After the second or third time we had this for dinner, we commented that we'd had it at others' homes. No one had realized we weren't "in on the secret," and then shared the recipe with us. It has since become a mainstay for us also!
