1 lb. medium shrimp, cooked and peeled
4 c. cooked medium pasta (about 2 c. uncooked)
2 c. chopped fresh plum tomatoes
1/2 c. chopped green or yellow pepper
1/3 c. fresh lemon juice
1/4 c. chopped shallots
1/4 c. chopped fresh basil or 4 tsp. dried basil
2 tbsp. olive oil, extra-virgin
1/2 tsp. salt
1/2 tsp. black pepper
1 garlic clove, minced

Combine all ingredients in a large bowl. Cover and refrigerate at least 8 hours.

If you do not want to use shrimp, substitute with broccoli florets or chopped pepperoni.
