Charleston Shrimp and Grits Recipe

1 onion, chopped
1 red sweet pepper, chopped
2 garlic cloves, chopped
1/4 c. wine
4 bay leaves
26 oz. can tomatoes
1 tsp. oregano
1 tsp. thyme
1 tsp. basil
2 dashes hot sauce
1 lb. peeled shrimp
salt and pepper to taste
olive oil
2 T. Old Bay seasoning

1/2 c. grits
2 c. water
2 tsp. salt
3 T. butter
2 T. Parmesan cheese
1/3 c. grated sharp cheese

Saute onion, pepper and garlic in olive oil. Add rest of ingredients, except shrimp, and simmer 20 minutes. Saute shrimp in olive oil with Old Bay seasoning for 5 minutes. Add to tomatoe sauce. Heat for several minutes. Serve over grits.

Boil water; add grits and salt. When thick, add butter and cheeses, stir til well blended.
