1 1/2 lbs. boneless pork ( cut into cubes)
1 T. cooking oil
1 can (15oz) black beans ( rinsed & drained)
1 can cream of chicken soup
1 can (14 1/2 oz) diced tomatoes w/juice
2 cans (4 oz.) chopped green chilies
1 c. instant brown rice (uncooked)
1.4 c water
2-3 T. salsa
1 tsp.ground cumin
1/2 c. shredded cheddar cheese

In a large skillet saute pork in oil. Add beans, soup, tomatoes, chilies, rice, water, salsa & cumin. Cook and stir until bubbly. Pour into ungreased 2 qt. baking dish uncovered and cook at 350 for 30 mins. Sprinkle with cheese.
