1 c. butter or margarine softened
1 1/2 c. sugar
2 eggs
3 3/4 c. flour
1/8 tsp. baking powder
1 packet of vanilla sugar
1 3/4 c. water
Grated rind of 1 lemon

In a large bowl, beat butter, sugars, and eggs together.
Add all dry ingredients, along with water and lemon rind, and blend until smooth.
Pour approximately 3/4 c. batter into waffle iron and bake.
To make your own vanilla sugar, place several beans in a large bottle and fill to the brim with very fine sugar. Close tightly and keep in a dry place. Refill with more sugar as you use it.
