BBQ Beer Brisket Recipe

1 cup firmly packed dark brown sugar
1 cup ketchup
1 jar chili sauce (12 oz)
1 envelope onion soup mix
1 can beer
3 to 4 lb. beef brisket
1 package small red potatoes, rinsed
1 lb. bag of baby carrots, rinsed

Directions:

1. Preheat oven to 325º
2. In large bowl mix together brown sugar, ketchup, chili sauce, and onion soup mix until blended. Gently stir in beer and mix into a sauce consistency.
3. Place brisket in a large roasting pan, fat side up. Pierce meat w/ knife several times. Arrange potatoes and carrots around brisket; pour BBQ mixture over beef and veggies. Cover w/ foil and roast in oven for 3 1/2 hours. Baste every hour and recover w/ foil.
4. Remove from oven and let stand in pan for 20 minutes; then remove brisket and cut into slices.
5. Return sliced beef to roasting pan and roast 30 minutes more so that each piece absorbs sauce.
6. Serve w/ hot crusty bread and salad.
