1 Swift Premium Chicken (about 1.5 kg)
1 White King Twin Mix Marinade & Breading, Garlic Flavor
Juice of 2 pcs. calamansi
1 cup Swift Ground Chicken
1 can Swift Vienna sausage, chopped
1 cup Swift Ham chopped
1 can Swift Liver Spread
1 cup Ground pork
1 cup minced pork fat (optional)
Minced chicken meat
3 pcs. pork sausage, chopped
1 small fresh pimento, chopped
1/2 cup raisins
4 whole eggs
1 egg yolk, for basting
1/4 cup catsup
1 tsp sugar

Egg yolk, lightly beaten
1 tbsp. Breading Mix

2 tbsp. white king butterfresh margarine
Remaining Breading Mix
2 cups chicken stock
1 can swift liver spread

Step One. Separate skin of chicken by making a long slit at the back starting from the base of the neck downwards. Loosen skin by inserting hands between skin and meat until skin is totally separated from the meat. Do not cut off wings. sew all openings except back opening. Step Two: Dissolve Marinade Mix (small packet) in calamansi juice; rub mixture into chicken skin; set aside. Step Three: Prepare stuffing by combining Swift Ground Chicken, Swift Vienna Sausage, Swift Ham, Swift Liver Spread, ground pork, minced chicken meat, pork sausage, pimento, catsup, sugar, 4 eggyolks, 5 egg white and raisins. Add remaining Marinade Mix plus 2 tbsp. Breading Mix (big packet); mix well. Step Four: Stuff chicken skin with mixture, packing well and filling all cavities. Sew opening. Wrap stuffed chicken in wet cheesecloth (katsa) and secure tightly with a string. Step Five: Place chicken in a large pot; add 2 cups water (or more, depending on the size of pot). Cover tightly and boil for about an hour. Step Six: Unwrap and transfer chicken on top of a baking pan. Combine 2 tbsp. of breading mix and egg yolk. Brush all over chicken. Broil for 25-30 minutes (if chicken browns too quickly, cover)
