Mom's Potato Soup Recipe

5 lb. bag of potatoes peeled and cut in 1" squares
2 cups Vidalia onions chopped
2 cups of chopped celery
1 Tbl. chopped garlic
1 to 1 1/2 pounds of ground sausage (I like to use the "hot" Italian)
2 cans of cream corn
chicken broth
1 pint Half & Half
Salt and Pepper to taste


Directions:
Directions:
Brown the sausage and drain off as much grease as possible
Add onion and celery and saute until tender
Add garlic
Place potatoes on top of sausage mixture and add chicken broth to just cover the potatoes
Cook at medium heat until potatoes are tender but not mushy
Add can corn
Add half and half
Bring back to boil, careful not to scorch the milk
Add seasonings to taste
Turn on very low heat until served

This a delicious reheated as left overs! JB likes to add a little Tabasco or Tiger Sauce. Serve with oyster crackers or Saltines. Enjoy!!
