1 large eggplant (2 pounds)
1 cup chopped onions
4 tablespoons olive oil + 2 tablespoons
˝ cup chopped green pepper
1 teaspoon minced garlic
2 large, ripe tomatoes (peeled and chopped), may
substitute tomato paste
˝ teaspoon salt
Freshly ground pepper
Dash of Tabasco sauce, if desired
2 to 3 tablespoons lemon juice

Bake eggplant in 425° oven for about 1 hour. When cooled enough to handle, skin and puree in blender. Sauté onion, pepper and garlic in 4 tablespoons of olive oil for 6 to 8 minutes. Combine with eggplant and blend. Add tomatoes, salt and freshly ground pepper. Heat the 2 tablespoons olive oil in skillet. Add eggplant mixture, bring to boil. Cook on low, covered for 1 hour. Uncover and cook ˝ hour more or until thick enough to hold its shape. Add lemon juice and Tabasco, if desired. Serve with wheat thins, thin pumpernickel or rye bread.

This is an inexpensive appetizer any time of year, but especially good when there are too many eggplants in the garden. Guests are always curious as to the ingredients and often request the recipe.
