Cajun Crab Soup Recipe

1 cup butter
2 1/4 cup chopped onion
4 1/2 cloves garlic, minced
1/2 cup plus 1 tablespoon flour
4 1/2 cups clam juice
4 1/2 cups chicken broth
2 (10 oz) packages frozen corn
2 1/4 teaspoons salt
1 1/4 teaspoons white pepper
1/2 teaspoon thyme
1/2 teaspoon cayenne pepper
4 1/2 cups cream
2 1/4 lbs carbmeat; drained
9 green onions, chopped

Melt butter in soup pot; saute onion and garlic; whisk in flour and cook 2 minutes. Stir in clam juice and chicken broth and bring to a boil. Mix in corn, and season with salt and pepper, thyme and cayenne. Reduce heat and simmer 15 minutes.

Stir in cream, crab and green onions. Heat through.
