1 large loaf bakery French bread, unsliced
5 oz. frozen chopped spinach
1 T. olive oil
1/2 lb. sweet Italian sausage, casings removed
1 small red bell pepper, seeded and chopped
1/4 c. chopped onion
1 large garlic clove, crushed
salt and pepper to taste
1 8 oz. container ricotta cheese
1/2 c. grated parmesan cheese
1 c. spaghetti sauce
10 oz. mozzarella cheese, grated
1 tsp. dried oregano
1/2 tsp. crushed red pepper flakes (optional)

Preheat oven to 425 degrees. Defrost frozen spinach in the microwave. Wring spinach dry using a clean kitchen towel. Split French bread loaf lengthwise and hollow it out. Then cut loaf in half across, making 4 pizza shells. In a medium skillet heat olive oil and brown and crumble Italian sausage using a wooden spoon. Add red bell pepper, onions, and garlic and cook an additional 3 to 5 minutes. Add chopped spinach and season with salt and pepper. Remove saucepan from heat. In a bowl combine the ricotta and parmesan cheeses. Stir in the sausage skillet mixture. Lightly spread each pizza shell with spaghetti sauce. Next equally fill each shell with the ricotta/sausage filling. Top each pizza with mozzarella cheese. Sprinkle with oregano and red pepper flakes. Place pizzas on a baking sheet and bake until cheese is bubbly and slightly browned on top, approx. 12-15 minutes.
