3 lb. pork roast
1 lb. pinto beans (dry)
2 pods (not cloves) garlic, chopped
2 T. red chili powder
1 T. cumin
1 tsp. oregano
2 cans green chili (or frozen)
1 T salt

Toppings:
Lettuce, chopped
Tomatoes, chopped
Onions, chopped
Cheddar cheese, grated
Sour cream
Salsa
Corn chips (ie. Tostitos)

Wash beans and soak overnight. In a large stock pot, braise pork roast on all sides in small amount of oil. Add rest of ingredients (except salt and green chili) and cover with water. Cook 6-8 hours on simmer. When meat is tender, remove and chop (don't shred). Put meat back into pot and adjust seasonings.

To serve: crunch up chips and place in the bottom of a bowl. Top with chalupa meat and bean mix. Add any or all of the toppings.
