Southwest Stuffed Chicken Breasts Recipe

1 1/2 C shredded Monterey Jack cheese
3 Tbsp. minced green onions
1 tsp. minced fresh cilantro, 1 tsp. minced garlic
3/4 tsp. cumin
3 boneless chicken breast halves, flattened
4 tsp. olive oil, 1/2 tsp. salt
1/2 tsp. freshly ground pepper
small romaine lettuce leaves

Preheat oven to 425 degrees
Combine cheese, green onions, cilantro, garlic and cumin in medium bowl; toss to blend. Spread 2 Tbsp. filling over breast.
Roll and secure with toothpicks.
Arrange stuffed breast in single layer in shallow roasting pan.
Drizzle chicken with oil or (spray with Mazola) and sprinkle with salt and pepper. Bake 25 ~ 30 min. Let stand 5 minutes and slice.
