Thumbprint Cookies Recipe

1/4 cup butter or margarine
1/4 cup shortening
1/4 cup brown sugar
1 egg, separated
1/2 teaspoon vanilla
1 cup all purpose flour
1/4 teaspoon salt
3/4 cup finely chopped nuts
jam of your liking

Heat oven to 350. Mix butter, shortening, sugar,
egg yolk and vanilla. Gradually add flour and salt
until the dough holds together. Shape into 1-inch
balls. Slightly beat egg white. Dip each ball into
egg white and then roll into nuts. Place parchment paper lined
cookie sheet. Press your thumb into the
center of each ball. Bake for 10-12 minutes, or until
light brown. Immediately remove cookies from
baking sheet. Let cool. Fill thumbprints with jam.

Makes about 2 dozen.
