Lemon Bars Recipe

1 c. flour
1/4 c. sifted powdered sugar
1/2 c. butter
2 eggs
3/4 c. granulated sugar
1/2 tsp. lemon peel
3 tbsp. lemon juice
2 tbsp. flour
1/4 tsp. baking powder

Preheat oven to 350

Stir together 1 cup flour and 1/4 cup powdered sugar. Cut in butter until mixture clings together. Pat into 8x8x2 inch baking pan. Bake at 350 for 12 minutes.

While dough is baking, beat eggs in a medium bowl. Add granulated sugar, lemon peel and lemon juice. Beat until slightly thick and smooth (8-10 minutes). In a separate bowl, stir together 2 tbsp. flour and baking powder. Add to egg mixture and pour over baked dough layer. Bake at 350 for 25-30 minutes. Dust with powdered sugar.
