Idaho potatoes
Red Onion (chopped)
Dill Pickle (chopped)
Hard Boiled Eggs (chopped)
Salt & Pepper to taste

Place whole potatoes in large pot, cover with cold water and add salt. Bring to gentle boil then immediately turn to simmer and cook until potatoes are soft but not mushy.
Drain potatoes and cool to room temperature. While potatoes are cooling, boil eggs.
When potatoes are cool, dice and place in large bowl.
Add remaining ingrediants to bowl of potatoes and mix well.
Empty into serving dish and garnish with sliced hard boiled eggs, parsley and paprika. Cover and refrigerate immediately. Serve cold.

This recipe is forgiving and does not require exact measuring. Additional items are optional such as, sliced olives, diced celery, or a dollop of mustard.
