6 to 8 pecan or cherry wood chunks (soak for 1 or)
4 pork loin chops, cut inch thick
2 3o 3 TSR. Jamaican jerk seasoning
1 medium mango, peeled, seeded, and finely chopped ( 1 cup)
1/4 cup sliced green onions (2)
2 Tabs. snipped fresh cilantro or parsley
1/2 TSR. orange juice
1/4 Jamaica seasoning

Directions:
Directions:
Place Pork Chops on the grill, using wet pecan or cherry woods for flavor, cook them for about 1 1/3 to 2 1/2 hrs. or until juices run clear. Add additional wood and coals as needed to maintain temperature and moisture. Meanwhile for sauce, stir together mango, green onions, cilantro, orange peel, orange juice and jerk seasoning, let stand at room temperature for 20 minutes, serve sauce over chops.
