3 Tbsp butter
1/4 C onion
1/2 tsp curry
4 Tbsp flour
1/8 tsp ginger
1 C chicken broth
1 C milk
2 C cooked and diced chicken (2-3 breasts)
1/2 tsp lemon juice
3/4 tsp salt
3/4 tsp sugar

Serve over rice (white or brown)

Topping ideas:
cheese, pineapple, coconut, raisins, cranberry sauce, sliced almonds, mandarin oranges, bacon bits, tomatoes, peas, etc...

Saute butter, onion, and curry. Blend in flour, ginger, salt, and sugar. Cover over low heat until thickened and smooth. Add chicken broth and milk. Boil 1 minute. Add chicken and lemon juice. Serve over rice and use any toppings. Kids love it.
