2 tsp olive oil
2 garlic cloves, minced and divided
1-1/2 cup diced tomato
1/3 cup chopped, pitted kalamata olives
1/4 cup chopped parsley, divided
1/4 cup water
1 T capers
4 6-oz fish fillets***
2 tsp fresh lemon juice
1/4 tsp black pepper
1/4 tsp salt
1 T grated lemon rind
***cod, sea bass, striped bass, haddock or scrod

Heat oil in large non stick skillet over med-high heat. Add 1 garlic clove and saute 30 seconds. Stir in tomato, olives, 2 T parsley, water, capers and bring to a boil. Cover, reduce heat to medium and cook about 5 min. Add fish, sprinkle with lemon juice, salt, pepper. Cover and cook 10 min (probably less, check after 5).
Remove from heat. *Combine remaining clove of garlic, 2 T parsley, and lemon rind. Spoon 2/3 c. of tomato mixture onto each of 4 plates, top with 1 fillet and sprinkle with the *mix. You can also add that mix to the Tom and serve it all together.
