1/3 c creamy peanut butter
1/4-1/3 c water
2 T low-sodium soy sauce
1 1/2 T rice vinegar
1-2 tsp chile paste w/ garlic
1/2 tsp sugar
1/2 tsp salt
1 lb medium shrimp peeled
Cooking spray
4 c cooked Asian Udon noodles (or 8 oz. linguine)
1 red bell pepper, julienned
3/4 c chopped seeded cucumber
1/4 c diagonally cut green onion
3 T chopped roated peanuts
2 T cilantro leaves
4 lime wedges

1. Prepare sauce: combine first 6 ingredients & 1/4 tsp salt. Stir w/ whisk.
2. Prepare shrimp: toss w/ 1/4 tsp salt. Saute in nonstick skillet coated w/ cooking spray over medium high heat for @ 3 minutes on each side.
3. Prepare pasta: combine peanut sauce, shrimp, noodles, bell pepper, cucumber, & onions in large bowl, toss well.
Sprinkle w/ chopped peanuts & cilantro.
Serve w/ lime wedges.
