3 egg whites
1 C granulated sugar
14 soda crackers, finely crushed.
1 C pecans or walnuts (chopped)
1 tsp. baking powder
1 tsp. vanilla extract

Topping:
1 pt. heavy whipping cream
1/3 cup granulated sugar
1/2 tsp. vanilla extract
1/2 cup chopped nuts

Directions:
Directions:
Butter a 9 in. pie pan, set aside.

Beat egg whites until almost stiff.
Gradually add sugar, and vanilla.
Continue to beat egg white mixture until stiff.

In another bowl, combine crackers, nuts and baking powder.

Add dry mixture to egg white mixture carefully so that egg white mixture does not break down.

Pour pie mixture into the buttered pie dish.

Bake @ 350 degrees for 35 mins.

Let cool and spread with whipped cream, sprinkle with nuts. Refrigerate.
