Very Important!
* Use a measuring scale for all ingredients *
1 lb. graham crackers
9 oz. melted butter
Bake @ 350* 7 min.

1 1/2 lbs. sugar
4 oz. cornstarch
5 lbs. cream cheese
1 lb. eggs
2 oz. egg yolk (1-2 egg yolks)
1oz. vanilla or (almond extract)
zest of one lemon
10oz. heavy cream (or sour cream or half & half)

Sift sugar & cornstarch. (Set aside)
Cream cheese & sugar using paddle attatchment.

Combine eggs , egg yolks, vanilla & lemon zest
Add slowly to cream cheese mixture.

Add heavy cream scrapping bowl.

Divide into (Two) Spring form pans.
Cook@300* 60-90 min. or until it doesn't jiggle & reaches 160* - 185*
*Use an instant read digital thermometer*
( scrambled eggs ! )

In a sauce pan:
Peel , core & slice pears.
Add cinnamon, melted unsalted butter , & brown sugar to taste.
Cook pears to coat & soften.
Remove pears & set aside.


Continue to cook sauce.
Add fresh squeezed lemon & cook.
Add 1/4 plus c. Brandy .
Cook down to carmelize sauce.

Put pears on baked cheese cake.
Drizzle with carmelized sauce
*Freeze cheesecake for 2 days.

Serve cake on a plate garnished with carmel sauce

In sauce pan add;
Sugar (75 per cent )
water ( 25 per cent )
1 t. lemon juice
Cook over med. heat until carmelized.
Remove from heat & add heavy cream to desired consistency.
Add cinnamon to taste
Drizzle over plate , Place cheesecake on it & serve.

This is the most Fabulous Cheese cake I've ever tasted!

Chef Beverly McDonald Came to our table & asked how Our meal was & at my request, sat down & wrote out her recipe for me on a piece of notebook paper.
She even told me where to purchase a digital thermometer .
Needless to say we gave her a big tip !
