2 tablespoons roux.
8 potatoes.
1 package Martin Sausage.
2 tablespoons olive oil.
1 large onion.
1/2 cup bell pepper.
1/2 cup celery.
2 cloves of garlic.
Water
Salt, red and black pepper to taste. (I use Tony's Seasoning).

Cut potatoes in cubes. In a large dutch oven pot with olive oil fry sausage until brown. Sauté onion, bell pepper, and celery until they are opaque. Add garlic. Add potatoes and water to cover potatoes. Add two tablespoon of brown roux. Cook until potatoes are tender. Serve over rice.
