1 Cup Butter, Divided
2 Washington Winesap Apples, Cored and Diced
1 Large Onion, Diced
1/2 Cup Raisins
1 Cup Walnuts, Coarsley Chopped
1 Can (16 oz.) Apricot Halves
1 Cup Bread Crumbs
1 tsp. Salt
1/2 tsp each Ground Nutmeg, Coriander, Cloves,
and Cinnamon
2 to 3 Whole Chicken Breast, Split
Salt & Pepper

Melt 1/2 cup butter in skillet. Add diced apples and onions; cook until onion is transparent. Mix in raisins and nuts. Drain apricots, reserving syrup. Add apricots to apple mixture with bread crumbs and seasonings; blend well. Melt remaining 1/2 cup butter in second skillet. Roll chicken breast in flour then brown in butter. Spread apple mixture in baking dish; place chicken breasts, skin side up on top. Salt and pepper lightly and cover with foil. Bake at 350 for 20 minutes; remove foil. Bake at 250 for 15 to 20 minutes longer.
