1 pound beef bottom round steak
1 tablespoon soy sauce
2 tablespoons cornstarch
1 teaspoon sugar
2 cups broccoli
4 tablespoons vegetable oil
teaspoon salt
cup water chestnuts or bamboo shoots
cup sliced mushrooms

1. Cut beef across the grain into thin slices. (Meat is easier to cut thinly when it is partly frozen.)

2. Marinate beef in mixture of soy sauce, cornstarch, and sugar. Set aside.

3. Cut broccoli and rinse and pat dry with paper towels.

4. Put 2 tablespoons olive oil in a hot skillet or wok. Add salt, broccoli, water chestnuts, and mushrooms. Cook, stirring constantly, until broccoli becomes a darker green (about 2 minutes). Remove to a bowl.

5. In the same skillet, add remaining 2 tablespoons oil.

6. Add beef mixture and stir constantly until beef is almost done (5 minutes).

7. Return broccoli, water chestnuts and mushrooms to the skillet and mix thoroughly.
